Heat set binding
For efficient production of meat products, functional proteins can be used which can improve water binding or emulsifying properties of the meat. Sonac can provide natural, functional proteins of bovine and collagen proteins, if required even of halal origin.
Cold set binding
Creating innovative and/or portion control meat products is possible with the natural meat binders Fibrimex® or Plasma powder FG. Sonac provides porcine of bovine origins in frozen or powder form. Full service can be provided with regard to practical applications (incl. equipment).
Coloring
An appealing color is a decisive factor for consumers to choose meat products. Sonac provides natural, meat like colorants of bovine or porcine origin. Product formulations are available for injection, mixing in dough and outside coloring.
Protein boosting
Injected and marinated meat products might have a need for proteins and/or flavor correction. Sonac has developed meat or collagen derived hydrolyzed proteins to perform this correction.
Natural Casings
Natural, tasty and world famous. Thanks to careful selection and accurate processing, natural casings are the most appropriate casings for sausages. Excellent to use for smoking and cooking.
